Jerusalem-Artichoke Chicken Soup
2 tablespoon Margarine
2 lbs Jerusalem Artichokes Sliced (about 20)
1 Medium Onion cut up
6 Cloves Garlic cut up
2 cups of Chicken Meat
1 teaspoon Seasoned Salt
49 oz Can Chicken Broth
½ Cup White Wine
1-2 Tablespoons Gumbo Filé
2 Cups Broccoli Slaw
Melt Margarine. Sauté Artichokes, Chicken, Onion and Garlic until browned. Add Chicken Broth, White wine and
bring to a boil. Simmer for 30 minutes. Add Gumbo Filé to taste and thickness of your choice. Add Broccoli Slaw and
simmer for 30 minutes more. Serve hot.
